1 large onion chopped and braised in oil with 1 tsp cumin, 1 piece of cinnamon stick and 2 elachie. Braise onion till completely melted and golden brown. Add in 2 tsps red chilli powder or to taste, 1 level tsp arad, 1 full tsp dhana jeeru, 1 full tsp ginger garlic and 1/2 tsp garlic. Braise well. Add in 1/2 tsp green masala and 1/2 tsp red masala and braise. Do not burn. Add in 2 medium sized liquidised tomatoes with 1 tblsp tomato puree and allow to cook till oil rises to the top. While the tomato is cooking, put on 5 eggs to boil. Shell and keep aside. Add in 1 tsp sugar to counteract the tartness of the tomato. Add in 2 potatoes cut into pieces and allow to cook in the tomato. Add in a bit of water to allow cooking. Once the potato is cooked and chutney is at a good consistency, slice your boiled eggs in half and place into the curry. Add in 1 green chillies and curry leaves for flavour.
